This peanut sauce can be used in a noodle salad (served hot or cold), with dumplings, or on meats. It's a quick and delicious recipe to have on-hand. Cheap, too!

INGREDIENTS:
1/2 pound Udon noodles (or soba noodles) - double the sauce recipe to cook one pound
1 tbs minced fresh ginger or ground ginger
1 green onion (chopped)
1/4 cup peanut butter (smooth or chunky, based on preference)
1 tbs chili crunch and oil
2 tbs toasted sesame oil
1 tbs soy sauce
1 tbs rice vinegar
1 tbs honey
1/4 cup starchy water
INSTRUCTIONS:
Bring 4 cups of water to a boil, add salt.
While water is boiling, chop ginger and green onion. Then combine into a bowl with peanut butter, chili crunch, sesame oil, soy sauce, rice vinegar, and honey.
Once the water is boiling, add the noodles and cook for the instructed cooking time.
Add 1/4 cup of the starchy pasta water to the sauce bowl and combine everything with a spoon or whisk. The sauce should be smooth and creamy.
Add sriracha or more chili crunch to the sauce to increase its spice level.
Combine the noodles with the sauce and mix thoroughly.
Top with sesame seeds, green onion, or chili crisp. Enjoy hot or cold!
