Sesame Peanut Noodles

This peanut sauce can be used in a noodle salad (served hot or cold), with dumplings, or on meats. It's a quick and delicious recipe to have on-hand. Cheap, too!

INGREDIENTS: 

  • 1/2 pound Udon noodles (or soba noodles) - double the sauce recipe to cook one pound

  • 1 tbs minced fresh ginger or ground ginger

  • 1 green onion (chopped)

  • 1/4 cup peanut butter (smooth or chunky, based on preference)

  • 1 tbs chili crunch and oil

  • 2 tbs toasted sesame oil

  • 1 tbs soy sauce

  • 1 tbs rice vinegar

  • 1 tbs honey

  • 1/4 cup starchy water



INSTRUCTIONS: 

  • Bring 4 cups of water to a boil, add salt.

  • While water is boiling, chop ginger and green onion. Then combine into a bowl with peanut butter, chili crunch, sesame oil, soy sauce, rice vinegar, and honey.

  • Once the water is boiling, add the noodles and cook for the instructed cooking time.

  • Add 1/4 cup of the starchy pasta water to the sauce bowl and combine everything with a spoon or whisk. The sauce should be smooth and creamy.

  • Add sriracha or more chili crunch to the sauce to increase its spice level.

  • Combine the noodles with the sauce and mix thoroughly.

  • Top with sesame seeds, green onion, or chili crisp. Enjoy hot or cold!
