Pumpkin Pancakes

What is autumn without pumpkin pancakes? Best served with butter, maple syrup, and a Halloween movie.

PREP: 10 min | COOK: 15 min | Serves 2




INGREDIENTS: 


  • 2 tbs melted butter (unsalted) (plus extra for cooking)

  • 1/2 cup pumpkin puree

  • 1 egg

  • 1/2 cup milk

  • 1 cup flour

  • 1 tsp baking powder

  • 1/4 tsp salt

  • 1/2 tsp cinnamon

  • 1/4 tsp nutmeg

  • 1/4 cup brown sugar


INSTRUCTIONS: 

  • Whisk the wet ingredients in a mixing bowl adding the egg last.

  • In another bowl, combine the dry ingredients. Then, slowly whisk in the dry mixture into the bowl with the wet pumpkin mixture.

  • In a pan on low heat, add 1-2 tbs of butter to melt before adding your pancake mixture.

  • Portion into four small pancakes or two large pancakes. Flip once small bubbles form on the batter, checking regularly to ensure they don’t burn. Serve with butter and maple syrup.
