Pizzelles

This classic Italian holiday cookie is super easy to make and a perfect hostess gift, wrapped up in a bow. Of course, you'll need a pizzelle maker. My family's favorite is the CucinaPro and that is where this recipe is from!

INGREDIENTS: 

  • 3 large eggs

  • 3/4 cup sugar

  • 2 tsp vanilla extract

  • 1 stick (1/2 cup) butter; melted and cooled

  • 1/2 tsp anise seed or anise extract

  • 1 3/4 cups all-purpose flour

  • 2 tsp baking powder

  • Powdered sugar (optional, for garnish)



INSTRUCTIONS: 

  • Melt butter and set aside. Beat eggs and sugar until light yellow, 2-3 minutes. Add melted butter and vanilla extract. Beat until blended.

  • Sift together the dry ingredients and fold into the liquid mixture until incorporated.

  • Heat pizzelle iron. Add about 1 tbs of batter to the grid just behind the center of the pattern. Bake for about 30-40 seconds until golden brown.

  • Remove pizzelles gently with a knife or spatula and place on a wire rack to cool. Repeat the process with the remaining batter.

  • Sprinkle powdered sugar on the pizzelles once they are cooled.
