Julia Child's Creamy Braised Carrots

A rendition of Julia Child's recipe for the perfect holiday side dish or to be paired with a nice roast. If you've never liked cooked carrots, give these a try.

PREP: 5 min | COOK: 20 min | Serves 8




INGREDIENTS: 


  • 4 cups carrots (peeled and cut)

  • 4 tbs butter

  • 2 1/2 cups of water

  • 1 tbs sugar (optional)

  • 1 tsp salt

  • 1 tsp pepper

  • 1 cup heavy cream

  • 1 tsp flour (optional)

  • Chives for garnish


INSTRUCTIONS: 

  • Cut and peel carrots.

  • In a saucepan on medium-low heat combine carrots, sugar, water, 2 tbs butter, salt, and pepper.

  • Cover and let simmer over low heat for 10-15 minutes, or until water is mostly absorbed.

  • Add heavy cream and additional 2 tbs of butter and simmer until thickened. Add a sprinkle of flour if needed to help thicken. Add more salt to taste.

  • Remove from heat and mix in chives.

  • Plate and garnish with additional fresh chives.
