Julia Child's Creamy Braised Carrots

A rendition of Julia Child's recipe for the perfect holiday side dish or to be paired with a nice roast. If you've never liked cooked carrots, give these a try.
PREP: 5 min | COOK: 20 min | Serves 8
INGREDIENTS:
4 cups carrots (peeled and cut)
4 tbs butter
2 1/2 cups of water
1 tbs sugar (optional)
1 tsp salt
1 tsp pepper
1 cup heavy cream
1 tsp flour (optional)
Chives for garnish
INSTRUCTIONS:
Cut and peel carrots.
In a saucepan on medium-low heat combine carrots, sugar, water, 2 tbs butter, salt, and pepper.
Cover and let simmer over low heat for 10-15 minutes, or until water is mostly absorbed.
Add heavy cream and additional 2 tbs of butter and simmer until thickened. Add a sprinkle of flour if needed to help thicken. Add more salt to taste.
Remove from heat and mix in chives.
Plate and garnish with additional fresh chives.
