Broccoli Rabe & Sausage Patties on the Grill
INGREDIENTS:
2 lbs sweet Italian sausage taken out of the casing (sweet or hot, depending on preference)
1 full head of broccoli rabe
2 tbs olive oil
3 cloves garlic
Pinch of crushed red pepper
1/2 cup water
1 cup grated Pecorino Romano (or Parmigiano Reggiano)
1/4 cup breadcrumbs (if needed to bind)
INSTRUCTIONS:
Finely chop broccoli rabe into bite-size pieces, mince garlic, and remove sausage from casing. Set aside.
In a pan, add olive oil, minced garlic, and red pepper flakes. Saute for one minute. Add chopped broccoli rabe and saute for another minute before adding 1/2 cup water. Cover with the lid and allow to steam for about two minutes (until broccoli rabe is tender), stirring about every 30 seconds.
Once tender, add broccoli rabe mixture to a bowl. Cover and refrigerate until cool (about 2 hours).
Combine sausage meat, broccoli rabe mixture, cheese, and breadcrumbs (if needed to bind). Mix with hands and form into 3-4oz patties.
Grill each patty for about 2 minutes on each side until cooked through.
These can be served over a salad; with marinara sauce and cheese on top; or with melted fresh mozzarella on a roll or burger bun.
