Apple Upside Down Cake

A fun take on the classic apple cake, the caramelization of the apples and spiced cake batter make this a fall comfort favorite.

PREP: 25 min | COOK: 40-50 min | Serves 8




INGREDIENTS: 

APPLES

  • 6 apples, peeled and sliced

  • 4 tbs butter

  • 1/2 cup brown sugar

  • pinch of salt


CAKE

  • 1 stick butter, melted

  • 1/2 cup vegetable oil

  • 1 tsp vanilla extract

  • 1 1/2 cup granulated sugar

  • 2 eggs

  • 1 1/2 cup flour

  • 1/2 tsp chai masala

  • 1 1/2 tsp baking powder

  • 1/4 tsp cinnamon

  • 1 tsp salt

  • 1/2 cup milk


INSTRUCTIONS: 

  • Preheat oven to 350F

  • Combine apples, butter, brown sugar, and salt in a saucepan on medium low heat. Mix frequently until apples become caramelized and butter and sugar are fully melted, about 10-15 minutes.

  • To prepare the cake batter, melt one stick of butter. Once butter is melted, cream in a stand mixer (or by hand) with vegetable oil, sugar, and vanilla extract. Add eggs and combine.

  • Sift dry ingredients (flour, chai masala, baking powder, cinnamon, salt). Set aside.

  • Slowly add dry ingredients to stand mixer and alternate with milk until both are combined into the batter.

  • In a 10in circular baking pan, line the bottom with parchment paper and butter. Add apple mixture and smooth throughout the entire bottom of the tray. Next, add the spiced cake batter. Smooth with a rubber spatula and place into the oven.

  • Bake for 40-50 minutes. Test if the cake is done by inserting a skewer or knife into the center of the cake; when it comes out clean, the cake is done.

  • Allow the cake to cool down for about 25 minutes before flipping it onto a serving platter with the apple side facing up. Remove the parchment paper from the apples. Top with a Crème Anglaise or simple honey whipped cream, and enjoy!
